Tips from our growers:

  • In Collinsville’s zone, roots are ready for harvest in October, but it’s ideal to wait until after the first frost
    • You can leave the roots in the ground until the ground thaws in February as well
  • Dig around the base and lift the center root and as many of the secondary roots as possible
  • If you raised and suckered the horseradish root, it may resemble the shape of the root below
  • Remove the secondary roots, but remember to save them as they will be what you plant for planting next season’s crop.
  • Now you’re ready to clean, grind, and enjoy!
    • Check out this link to our recipes page for how to grind and a few more creative options for using your horseradish roots
  • Store harvested roots in the refrigerator in a perforated plastic bag
    • If it’s a sealed bag just poke a few holes for airflow
    • The root will store in the refrigerator for a couple of months
