J. R. Kelly Company has three coolers, which provide
over 10,000 square feet of cold storage.
This allows us to store horseradish
year round. The newest cooler is 106 feet by 50 feet by 20 feet and
was built in the spring of 2000. Each cooler is equipped with pallet
racking to maximize cooling capabilities and provide more efficient
cooling of the horseradish.
The temperature is
kept at 28 degrees Fahrenheit (-2.2 degrees Celsius), which prevents
sprouting and molding of the horseradish.
